Taco Skillet

    The Bulk of It

  • 1 lb ground beef chicken, or turkey
  • 1 large onion diced
  • 2 large bell peppers or bok choy diced
  • 2 zucchinis diced
  • 1 can diced tomatoes and green chilies (or 15 oz fresh chopped)
  • 3 cups baby spinach or a greens mix or other salad
  • Taco Seasoning (homemade is best) Use:

  • 1/4 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/4 tsp oregano
  • 2 T chili powder
  • 1.5 tsp paprika
  • 1 T cumin
  • 1 tsp coriander
  • 1/2 tsp cayenne pepper
  • 1/4 tsp onion powder)
  • **Optional Toppings

  • Cultured cream
  • Cheese as desired and able
  • cilantro
  • Guacamole


Make the seasoning and place in a small bowl.

Mix the seasoning with the meat. Add ground meat to the skillet and brown.

As you are browning, dice your onion, zucchinis, and pepper (or bok choy).

Add those veggies until soft.

Stir in tomatoes

Put over a bed of greens and add a nice dollop of cultured cream & cheese to the top! Add cilantro and other toppings as desired and able.
