Veggie Bake

Vegetables are the. thing. The more of these bad-boys you get, the better for your microbiome diversity and overall health. It is my life's mission to not only get the word out but also keep learning myself so I can get better and better at using vegetables to help people of all walks of life and all health needs.

When I was learning how to cook and how to eat more vegetables, this was one of the first recipes I adapted and put into regular meal-prep rotation. I've had it with breakfast, lunch, and dinner.

Veggie Bake

Ingredients

  • Medium Head of Cauliflower
  • 1 large or 4 small Zucchini
  • 1 large onion
  • 1 large or 3 small Beets
  • 6 T or more Coconut oil, melted
  • Salt & pepper
  • Paprika
  • Dash of cayenne
  • After baked, mixed chopped (and amount you desire):

  • parsley
  • cilantro
  • dill

Directions

Preheat oven to 425 degree F

Chop your veggies into bite size or smaller pieces and place into the huge mixing bowl

Melt your coconut oil and drizzle over the veggies, then mix until the veggies are coated with some oil, adding the salt, pepper, paprika, and dash of cayenne.

Cover with foil and place in the oven for 25 mins, then take out and using two big spoons, mix the veggies around, place back in oven for 10 more minutes.

Repeat mixing the veggies every 10 minutes until they are fully cooked through. Remove from oven and let sit for 5 mins then serve or let cool before storing in the fridge.

Description

This is a perfect batch-cook side; it helps you eat more veggies without having to cut them up and prepare them every time, AND it seriously is SOOOOOO good! Veggies can be amazingly addictive when prepared well! You can use any combo of veggies you want, and seasonal is always best, but here's what I usually do!
